Apple Enchiladas

Cherries or peaches can be substituted for apples.

1 (21 ounce) can apple pie filling
6 (8 inch) flour tortillas
1 teaspoon ground cinnamon
1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup water

  • Spoon about one heaping quarter cup of pie filling evenly down the center of each tortilla.
  • Sprinkle with cinnamon; roll up, tucking in edges; and place seam side down in prepared dish.
  • In a medium saucepan over medium heat, combine butter, white sugar, brown sugar and water. Bring to a boil, stirring constantly; reduce heat and simmer 3 minutes.
  • Pour sauce over enchiladas and let stand 45 minutes.
  • Bake in preheated oven 20 minutes, or until golden.
  • Serve with vanilla ice cream.

    3. I assume when it sits you allow the sauce time to soak into the tortillas. Otherwise you would have crispy tortillas in bubbling sauce and it wouldn't taste quite so much like this nice dessert. It might be a bit runny.

    4. Easier than making Apple Pie and Portion Control is a bonus with this recipe!! Dont rush the 45 minute resting time for the sauce and enchiladas before baking. This step helps to magically transform the flour tortillas into a faux pasty dough ;-)

    5. So I've made this both ways (letting the sauce sit 45mins and not sit time at all) and honestly it didn't make that big of a difference! It wasn't crispy at all and still tasted GREAT! so if you're in a time crunch skip the 45 min sitting period n you'll be fine!

  2. Made this today. Everyone liked it. Comments were: more cinnamon and more sauce to pour over ice cream. By "prepared pan" I just assumed that meant butter the pan.

  7. You probably shouldn't name this "apple enchiladas" though. That's a term that is used more for actual enchiladas (tortilla with chicken, cheese, etc).

    1. Actually, enchilada is the correct term. Enchilada: A tortilla rolled and stuffed with a mixture. If you think about it enchiladas do not always contain chicken, they are often made with beef or even no meat at all. In this case APPLE PIE FILLING. Such a great recipe, thank you for sharing!!

  10. I'm trying this tomorrow, hubby's fav is apple, mine is cherry. I'm wondering if you could tweak and make cherry blintzes using tortillas? Would be a time saver, have to try that too!

    1. That is an amazing idea. Use 8 oz of cream cheese, 1 egg, 1/2 cup sugar or splenda, the cherry pie filling, which you can get sugar free at Walmart. That sounds amazing. For the topping, use Splenda and Splenda blend for a low sugar alternative. That sounds soooo good.

  11. You can't call them enchiladas and then not use corn torillas... plus with the use of corn tortillas, this dessert would be GLUTEN FREE! ;) They sound very delicious though :)

    4. Actually, true enchiladas, by definition, are made with corn tortillas. And there are several brands of pre-made corn tortillas out there that would work very nicely with fruit filling. Like most International cuisine, Americans have adapted the recipes, especially true regionally, making them their own. In other words, if you picked one dish, say chicken flautas, and had them in Mexico, Colorado, North Carolina and New Hampshire, you would be presented with a wide variety of dishes, obviously the most authentic in Mexico and then varying degrees of authentic from there. But at the end of the day, food is about satisfying the palate of the person it's being fed to so I say adapt away and make each dish your own!

  12. The sauce is a neat idea. I was taught how to make these by a co-worker who calls them faux crepes and only uses the tortillas and canned fruit pie filling. My own twist is to use 2 cans of filling and instead of sauce, add extra fruit filling over top, cover with foil and bake at 350 for half an hour. Can be done with the no-sugar added filling and is delish.

  22. Flour tortillas don't belong in a recipe that makes them mushy. Unless you're from north of San Antone.
    Its corn or nothing in an enchilada recipe.
    Enchilada literally means with CHILE(hot Peppers).

  23. I made the APPLE ENCHILADAS. Not sure why some of the posts on the pinterest post are so negative. How would you feel if someone attacked a recipe that you posted on pinterest or anywhere on the web. Think about what you are posting-enchiladas/not enchiladas, cherry/apple, flour/corn. Does it really matter? Cornfed Mamma can post what she wants as this site doesn't hold people back. Post what you want. This is a great idea, no matter how it's made or which tortilla/filling you use.

    When I made these, I made half by adding shredded cheddar cheese. Both were a hit with my friends!

  27. This recipe is so amazing because it can be tweaked for the pickier people in my family (those who give me stink eye when I talk about my love for cherry pie filling). I can roll a few apple, some peach and several cherry, too, and put them all in the same pan! Brilliant!

    I may try to modify this recipe with a bit of sweet cream cheese in each ENCHILADA to see how they turn out.

    And, as a side note, here in California, LOTS of people substitute corn tortillas for flour in many instances. Sometimes you can't, but most times you can.

  37. I read this recipe a couple of days ago and made them today. My husband can't get enough of them. For that cynic that said enchiladas must have cheese, I added shredded cheddar along with the apples inside the tortillas. Yum! Also, I used 2 cans of pie filling and just added the other ingredients to that, using half to fill and the other half over the top. Easy!!!!!

    1. There are tons of apple pie filling recipes out there, but you don't really need one. Just peel, core, and either slice or dice the apples (your preference.) Add some cinnamon, nutmeg, and brown sugar to taste. Bake at 350 until apples are soft. (This will depend on how large you cut them.) Let it sit a while and it will cool off and the juices will thicken. If you end up with a ton of juice, you can either thicken with cornstarch or add something like crushed Cheerios, instant oats, etc to soak some of it up.

  50. I made this last night. Oh. My. Goodness. It was fantastic!!! Only tiny change I made was to add the cinnamon to the syrup mixture to pour over the top. I forgot to put it in the roll ups. Oh well... It was still FABULOUS!!!! Thanks again!

A friend of mine made a wonderful whole wheat crust for her apple pies. It's worth a shot. This looks like a great recipe and base from which to explore possibilities!

  56. Just pulled these out of the oven and tried them. Pretty good but I thought they were going to be sweeter. Iwill make these again but I will tweek it to make a bit sweeter. Maybe pour some sauce before put it in oven then once they come out pour more. Overall, they are good.

  60. Made these today.. had a huge box of apples.. so made my own filling.. cut up a few apples.. added a mixture of 2 tsp. cinnamon, 1/4 cup sugar and 1 1/2 TBS. cornstarch and a splash of water and cooked on stovetop for about 20 minutes. They were awesome! Thanks for the recipe!

  67. I am making these today… we may or may not have a PTO picnic tonight (depending on weather) - but either way, I'll win. If the picnic is cancel, then my family will be able to enjoy apple enchiladas. They smell delicious already and they are currently awaiting their 45-minute soak-it-up spa treatment in the pan… then I am going to bake them. I saw this on Pinterest too and thought -- I always have a couple of cans of pie filling in my pantry and I always end up with extra flour tortillas to use up.   72. To those commenting about what not to name them. AshleighD:: the correct term would NOT be enchiladas. You are correct they dont always contain chicken, meat BUT the term "enchiladas" stands for: slightly covered in pepers/chiles. Since these are fruit filled they wouldnt be "enchiladas" thought I would clarify that out.

  73. I am bringing them to work very early for a birthday. Has anyone ever had to let them sit overnight in the fridge and bake them in the morning? I don't really have 45 minutes to let the sauce sit on them in the am but I certainly could at night and then bake them in the morning. I just don't want the tortillas to become mushy. Any advice?

    1. Hello! I actually made these one night and my husband and I were too full to eat them. I stuck them in the fridge overnight and they were delicious! I actually preferred them this way than to just letting them sit the 45 minutes when I made them a second time. The juice gets all soaked up into the tortillas and makes them a delectable texture!

Obiusly an apple won't get you spiced, so pleas stop using termns that you don't know what do they mean; that is an insult to my origins. Maybe throw some cream cheese in it for some QUESO MANZANA CAZUELA? Mehhhh ditch that - I flunked high school Spanish for a reason! Home Ec., too, for that matter!   86. We had these for dessert tonight. I don't think they should be called apple enchiladas, that is not the correct name for them........

    They should be called apple MIRACLES!!! I am not even a huge apple fan and these were AMAZING. I made these as a special treat for my husband and I ended up loving them as much as he did. I think my favorite part is the tortilla when it soaks up that sauce. That cozy, buttery sauce that I just want to drink.

She is sharing her recipes, so just be grateful and stop with the picking. I can't wait to make these. I have everything already except pie filling and I think I'm gonna try all different kinds of additions and flavors!

  92. OMG! The longer I read these comments the more fantastic ideas are brought up. One poster suggested cheddar cheese-a great combination with apples. Another poster suggested using peaches, another great flavor combo. I'm having Card club tonight and it's my turn to make dessert. This is it. As for Jesus, get a life fella. I'm going to call them Apple enchiladas, and being Italian I don't know the difference nor do I care.

  94. Pinned this a while back and finally made it for Cinco de Mayo 2013. DELISH! I used cherry pie filling, omitted the cinnamon and added <1 tsp almond extract to the sauce. Thanks for a fantastic dessert!

  102. I just read all the replies and I can't get over all the nit picking over a name! LOL Those ladies really need to grow up and be adults instead of teen aged high school kids!

    I can't wait to try this recipe! I have copied down all the suggestions above and am printing it out one for myself and one for my daughter to use as well.

    I believe we cook them in a pan big enough for the amount of tortillas we use and we store them in the fridge after cooking. As far as waiting the 45 minutes is concerned, I'm guessing we don't refrigerate? Please let me know this info, I really want to make these for my family's celebration when my daughter has the baby in the next 2 weeks!
