1 lb ground beef
1 medium chopped onion
1 T chili powder
1/2 cup chopped green pepper
3/4 t salt
3/4 cup cornmeal
1 1/2 t baking powder
1/3 cup milk
1 T sugar
1 T flour
1 egg (beaten)
1 T oil
1 can whole kernel corn (drained)
1 can diced tomatoes
1 can black beans (drained and rinsed)
- Brown beef with onion and drain.
- Add tomatoes, 1/4 t salt, chili powder, corn, green pepper, and black beans.
- Simmer for 15 minutes.
- Pour into greased 2 quart casserole dish.
- Combine cornmeal, flour, sugar, 1/2 t salt, baking powder, egg, milk, and oil.
- Stir until just moistened.
- Spread mixture over beef.
- Bake at 425 degrees for about 25 minutes or until corn bread is brown.
- Serve with cheese and sour cream on top.
