1 1/2 cup potatoes
1 pound powdered sugar
1/2 cup peanut butter
- boil, drain, and mash potatoes, leaving no lumps
- mix potatoes with sugar
- roll mixture into an oblong shape on a pastry mat (lightly dusted with powdered sugar)
- spread peanut butter on top
- roll up like a jelly roll
- cut in slices
- keep refrigerated
