Pizza Dip

Momma Mia!

1 pkg softened cream cheese
3/4 cup mayo
1 1/2 cups shredded Provolone cheese
8 oz sliced pepperoni
2 tomatoes (chopped)
1/4 cup chopped black olives optional
1/4 cup chopped green peppers (optional)


  • Set 1/2 cup of Provolone off to the side
  • Mix rest of ingredients together until blended well
  • Spoon into a six cup casserole dish
  • Sprinkle remaining Provolone on top
  • Bake at 350 degrees until bubbly
  • Serve with pita chips, garlic bread, bread sticks, or crusty Italian rolls.

Rotel Chicken Spaghetti

4 -6 chicken breasts, cooked & chopped
1 can cream of mushroom soup
1 can chicken broth
1 can Ro-Tel tomatoes
1 lb Velveeta cheese, cubed
12 ounces spaghetti, cooked & drained


  • Mix soup, broth, and Ro-tel

  • In a 13x9 greased casserole dish layer as follows: Spaghetti, Chicken, Soup mix, Cheese.

  • Bake at 350 degrees until cheese is melted.

  • Blonde Brownies

    1 cup sifted all-purpose flour
    1/2 teaspoon baking powder
    1/8 teaspoon baking soda
    1/2 teaspoon salt
    1/2 cup chopped walnuts
    1/3 cup butter
    1 cup packed brown sugar
    1 egg
    1 tablespoon vanilla extract
    2/3 cup semisweet chocolate chips *

    • Mix  flour, baking powder, baking soda, and salt and set aside.
    • Melt butter and add brown sugar and vanilla.
    • Add egg to brown sugar mixture and blend well.
    • Add flour mixture and mix well.
    • Spread in 9 x 9 pan.
    • Sprinkle chocolate chips on top.
    • Bake for 20 to 25 minutes
    *You can add practically any flavor chip to this versatile recipe.  Butterscotch chips are really yummy!

    Nanny's Peanut Butter Cookies



    Got milk ???
    1 cup softened butter
    1 cup white sugar
    2 egg
    1 cup brown sugar (packed) 
    1 egg yolk
    2 teaspoons vanilla extract
    1 (18 ounce) jar peanut butter
    2 cups all-purpose flour
    1 teaspoon baking soda
    1/2 teaspoon salt
    1 cup chopped peanuts
    • In a large bowl, cream butter, white sugar, and brown sugar until smooth.
    • Add the eggs, yolks, and vanilla; mix until fluffy.
    • Stir in peanut butter.
    • Sift together the flour, baking soda, and salt; stir into the peanut butter mixture.
    • Stir in the peanuts.
    • Refrigerate the dough for at least 2 hours.
    • Roll dough into walnut sized balls.
    • Place on the prepared cookie sheet and flatten slightly with a fork.
    • Bake for 12 to 15 minutes at 350 degrees. 
    • These cookies taste great when slightly undercooked.

    Crab Rangoons

    2 pkg softened cream cheese
    1 cup sugar
    2 T minced green onions
    4 dozen wonton wrappers
    1/2 to 3/4 cup minced crab (imitation or real)


    • Combine cream cheese, sugar, chives and crab until smooth
    • Drop small spoonful in center of wrapper
    • Fold wrapper from a square into a triangle making sure the edges are sealed (dipping finger in water and running along edge will help this
    • Deep fry until golden brown
    • Serve hot

    Fried Okra Salad

    I don't really like okra but when I tried this I ate two big bowls!!!

    6 slices bacon
    2 packages (10 oz each) frozen sliced okra (unbreaded), thawed
    cornmeal for coating (season cornmeal for added flavor)
    1 large tomato
    1 small to medium onion
    1/3 c. sugar
    1/4 c. red wine vinegar
    3 tbsp. oil

    • Fry bacon until crisp, set aside.
    • Add enough oil to the bacon drippings to fry okra.
    • Lightly coat thawed okra in cornmeal.
    • Fry okra in oil until cooked through, set aside to cool to room temperature.
    • Just before serving, crumble bacon into okra.
    • Chop tomato and onion and stir into okra.
    • Mix sugar, vinegar, and oil, make sure sugar is dissolved
    • Toss salad with dressing before serving.

    Sausage and Cream Cheese Crescents

    1 pound sausage
    1 pkg cream cheese
    2 cans crescent rolls

    • Fry sausage (crumbled) until just done and drain
    • Thoroughly mix sausage with cream cheese
    • Spoon mixture into crescent roll triangle and roll up according to directions on can
    • Bake at 350 degrees until crescent rolls are done.
    • Serve with scrambled eggs for breakfast or serve as an appetizer.

    Best Ever Breakfast Casserole

    I modified a recipe from a dish I saw on a cooking show several years ago.  It was way too complicated and had Feta cheese.  This is my version because I'm lazy and I'm not a fan of Feta cheese.  Enjoy!


    1 can crescent rolls
    1 lb sausage
    6 eggs
    1 pkg cream cheese
    1 1/2 cups cheddar cheese
    • Layout 1 can of crescent roll dough flat in a 9 x 13 casserole dish.
    • Bake at 350 degrees for 10 minutes or until just done (not brown but not gooey)
    • Brown sausage and drain.
    • Mix sausage with cream cheese.
    • Soft scramble  the eggs, you want them still a little wet
    • Mix with sausage/cream cheese mixture
    • Spoon on top of crescent rolls
    • Top with cheddar*
    • Bake at 350 degrees until cheddar is melted
    * you may also top it with crumbled bacon and I like to add some provolone cheese in addition to cheddar

    Fudgey Cake

    1 box Fudge cake mix
    2 cups buttermilk
    3 eggs (well beaten)
    2 cups oil
    1 box chocolate pudding mix


    • Mix all ingredients
    • Grease and flour two nine inch cake pans
    • Bake at 350 degrees for 25 to 30 minutes or until done.
    • Cool and frost with Creamy Cool Whip Frosting

    Creamy Cool Whip Frosting

    In honor of my Katiebug's 13th birthday!

    1 envelope Dream Whip Frosting Mix
    1 pkg cream cheese softened
    1 large tub Cool Whip

    • Whip together softened cream cheese and Dream Whip until creamy
    • Whip in Cool Whip until mixed thoroughly
    • Add coloring if desired
    • Frost cake and store in refrigerator
    • Goes well with Fudgey Cake

    * Substitute chocolate Cool Whip and chocolate pudding mix to make Creamy Chocolate Frosting

    Apple Enchiladas

    Cherries or peaches can be substituted for apples.

    1 (21 ounce) can apple pie filling
    6 (8 inch) flour tortillas
    1 teaspoon ground cinnamon
    1/2 cup butter
    1/2 cup white sugar
    1/2 cup brown sugar
    1/2 cup water

    • Spoon about one heaping quarter cup of pie filling evenly down the center of each tortilla.
    • Sprinkle with cinnamon; roll up, tucking in edges; and place seam side down in prepared dish.
    • In a medium saucepan over medium heat, combine butter, white sugar, brown sugar and water. Bring to a boil, stirring constantly; reduce heat and simmer 3 minutes.
    • Pour sauce over enchiladas and let stand 45 minutes.
    • Bake in preheated oven 20 minutes, or until golden.
    • Serve with vanilla ice cream.

    Southern Style Corn

    6 T butter
    2 T flour
    2 T sugar
    1 t salt
    1/2 cup milk
    1 can whole kernel corn


    • Melt butter in skillet.
    • Mix flour, sugar, and salt together real well.
    • Add corn, and dry mix to the butter and stir thoroughly.
    • Add 1/2 cup milk.
    • Cook, covered, for 10 minutes on low heat.

    Tamale Pie

    1 lb ground beef
    1 medium chopped onion
    1 T chili powder
    1/2 cup chopped green pepper
    3/4 t salt
    3/4 cup cornmeal
    1 1/2 t baking powder
    1/3 cup milk
    1 T sugar
    1 T flour
    1 egg (beaten)
    1 T oil
    1 can whole kernel corn (drained)
    1 can diced tomatoes
    1 can black beans (drained and rinsed)

    • Brown beef with onion and drain.
    • Add tomatoes, 1/4 t salt, chili powder, corn, green pepper, and black beans.
    • Simmer for 15 minutes.
    • Pour into greased 2 quart casserole dish.
    • Combine cornmeal, flour, sugar, 1/2 t salt, baking powder, egg, milk, and oil.
    • Stir until just moistened.
    • Spread mixture over beef.
    • Bake at 425 degrees for about 25 minutes or until corn bread is brown.
    • Serve with cheese and sour cream on top.

    Easy BBQ Chicken

    2  to 2 1/2 pounds chicken
    16 ounces Coca cola
    1 bottle BBQ sauce

    • Place chicken in a large deep pan.
    • Mix Coke and BBQ sauce.
    • Pour over chicken.
    • Simmer until chicken is tender and sauce is thick.

    Mamaw's Liver and Onions

    Not a favorite of most but, I sure love it!

    1 to 2 pounds beef liver
    2 envelopes Lipton onion soup mix
    1 medium onion


    • Coat liver in flour and salt
    • Fry until browned
    • Place liver in a crock pot.
    • Empty soup packets and sliced onion on top.
    • Cover with water.
    • Simmer on low until tender.

    Carmel Pecan Ice Cream

    Scooter's favorite ice cream!

    2 T butter
    1 cup chopped pecans
    1/2 cup white sugar
    1 quart half and half
    1 cup firmly packed brown sugar
    1 (12 oz) jar caramel ice cream topping
    1 T vanilla
    1 quart whipping cream

    • Combine butter, pecans, and white sugar in an 8 inch skillet
    • Cook over medium heat, stirring constantly until sugar melts and turns golden brown (6 to 8 min)
    • Drop by rounded teaspoonfuls onto wax paper and let cool
    • Break into small clusters and set aside
    • Combine half and half, brown sugar, and caramel and mix well
    • Stir in whipping cream and pecan clusters
    • Pour mixture into a one gallon ice cream freezer and freeze according to instructions
    • Pack freezer with additional ice and salt and let stand one hour to ripen before serving.
    • Makes 3 quarts

    Cranberry Salad

    1 large box cherry jell-o
    1 can mandarin oranges (drained)
    1 small can crushed pineapple
    2 cups hot water
    1 cup chopped nuts
    1 lb. cranberries
    1 1 /2 cups sugar

    • Freeze cranberries
    • Put frozen cranberries in food processor and chop fine
    • Make jello using half amount water called for.
    • Dissolve sugar in jello.
    • Mix jello, cranberries, nuts, mandarin oranges and pineapple together. 
    • Will keep in frig 2-3 weeks.

    Blueberry Delight

    2 sticks melted butter
    2 cups flour
    1 cup chopped pecans
    8 oz cream softened cream cheese
    1 large carton cool whip
    1/2 box powdered sugar
    1 can blueberry pie filling

    • Mix butter, flour, and pecans
    • Pat into an 11x13 pan. 
    • Bake 25 to 30 minutes and let cool.
    • Mix cream cheese, 1/2 of the cool whip and powdered sugar
    • Spread over cooled crust
    • Top with blueberry pie filling
    • Store in refrigerator



    Mix and spread over cooled crust.

    Texas Salad (Slaw)

    1 large cabbage
    1 onion
    1 carrot
    1 bell pepper
    1 cup sugar
    3/4 cup white vinegar
    3/4 cup vegetable oil
    1/4 cup water
    2 T salt
    1 t ground mustard
    1 t celery seed
    1/2 t turmeric

    • Grate vegetables and mix sugar over them. 
    • Heat vinegar, oil, water, salt and spices to boiling point. 
    • Pour over vegetables and mix. 
    • Refrigerate at least 4 hours before serving.

    Peaches and Cream Cheesecake

    Made in three layers...
    Layer 1
    3/4 cup flour
    1 t baking powder
    1/2 t salt
    1/2 cup milk
    3 T butter
    1 box vanilla pudding mix (not instant)
    1 egg

    Mix all ingredients together.  Beat 2 minutes at medium speed.  Pour into a greased 9 inch deep dish.

    Layer 2
    1 (15-20 oz) can sliced peaches

    Drain peaches well and reserve juice.  Place peaches on top of layer one.

    Layer 3
    1 pkg cream cheese
    1/2 cup sugar
    3 T reserved peach juice

    Mix together well and spoon on top of peaches making sure you leave a one inch edge around the pan
    Sprinkle 1 T sugar and 1/2 t cinnamon on top.  Bake at 350 degrees for 30 - 35 minutes until crust is golden brown.  Filling will appear soft.  Store in refrigerator.

    Shrimp Jambalaya

    One of my favorite dishes Momma makes...

       1  pound shrimp (cooked and peeled)
       1  pound smoked sausage
       1  T flour
    1/2  t Worcestershire sauce
           dash paprika
       1  (16oz) can tomatoes
    1/4  c chopped onion
       3  T chopped green peppers
       1  cup minced garlic
    1/2  t salt
           dash cayenne pepper
       2  (6oz) cans sliced mushrooms
       4  cups cooked rice

    • Cut sausage in small pieces and fry until brown.
    • Add onion, green pepper, and garlic and cook until tender
    • Blend in flour and seasonings
    • Add mushrooms, tomatoes, and shrimp.
    • Simmer for 20 minutes
    • Pour over cooked rice

    Cabbage Creole

    Even if you don't like cabbage you should try this.

    1 -2 lb ground beef
    1 small onion, chopped
    1 medium head of cabbage, chopped
    1 (10 ounce) can Ro-tel
    1/2 lb Velveeta, cubed
    1 teaspoon salt
    1 teaspoon black pepper
    1 teaspoon garlic powder

  • In a large skillet, brown beef with chopped onion. Drain, if necessary.

  • Return meat mixture to pan.

  • Add chopped cabbage (this may have to be done in batches depending on how big of a pan you use).

  • Cook until cabbage is somewhat wilted.

  • Add Rotel and continue to cook until cabbage is tender.

  • Add cubed Velveeta and seasonings to taste.

  • Cook until cheese is melted.

  • Serve hot.
  • Strawberry Bon Bons

    1 can sweetened condensed milk
    2 large packages wild strawberry jello
    7 oz sweetened shredded coconut
    1 c finely chopped pecans

    red sprinkles
    green sprinkles


    • Combine all ingredients, except sprinkles
    • Refrigerate at least an hour so that they mix is firm enough to shape.
    • After mixture is chilled scoop out tablespoon sized amount of mix and mold into strawberry shape.
    • Roll the strawberry, except for the top into red sprinkles, press top into green sprinkles to create the look of a stem
    • Store in frig

    Ding Dong Cake

    1 box pudding type cake mix
    1 c. milk
    4 tbsp. flour
    1/2 c. butter
    1/2 c. shortening
    1 c. sugar
    1 tsp. vanilla
    • Bake cake according to directions on box, using a 9"x13" pan.
    • Combine milk and flour.
    • Cook until thick, then cool.
    • Mix butter and shortening for 4 minutes.
    • Add sugar and vanilla and mix 4 more minutes.
    • Add flour mixture and beat 4 minutes more.
    • After it cools, slice in half horizontally and spread with filling.
    • Replace top layer of cake or you could bake it in a bundt pan and then slice in half horizontally and scoop some of the cake out of middle. I've seen it both ways.
    • Cover with icing. (recipe below)
    ICING:
    1 tbsp. butter
    1 tsp. vanilla
    3 tbsp. milk
    2 tbsp. cocoa
    Add powdered sugar until thick

    Sour Cream Raisin Pie

    1 cup sugar
    3 egg yolks
    1 cup sour cream
    1 cup raisins
    3 T flour

    • Soak raisins until tender
    • Mix egg, sugar, flour, and sour cream
    • Add raisins
    • Cook until thick, stirring constantly
    • Pour into pie shell and cover with meringue.

    Broccoli Casserole

    1 pound Velveeta (cubed)
    1 cup cooked rice
    8 oz cooked broccoli
    1 medium onion (finely chopped)
    1 stick margarine
    1 can cream of mushroom soup
    1 1/2 cups crumbles Ritz crackers
    • Mix all ingredients together, except crackers, and pour in a 1 1/2 quart casserole dish
    • Sprinkle with crackers
    • Bake at 350 degrees for 30 minutes or until crackers are toasted and cheese is melted.

    Optional:  add some sliced water chestnuts to the mix or you can substitute cream of mushroom for cream of chicken

    2 pkg cream cheese (room temp)
    6-8 green onions
    1 jar dried beef
    1 t accent
    1 t Worcestershire sauce
    chopped pecans

    • Mix all ingredients together
    • Form into a ball
    • Roll in chopped pecans
    • Chill and serve with crackers

    Lasagne

    When the stars make you drool like a bigga pasta fool, that's amore!

    8 ounces lasagna noodles
    1 pound ground beef
    2 one pound cans tomatoes
    8 oz tomato sauce
    1 T seasoning salt
    1 pkg spaghetti sauce mix
    2 cloves minced garlic


    • Fry meat, garlic, and salt until meat is brown, drain
    • Add rest of ingredients, except cheese, and simmer 30 minutes
    • Cook noodles according to directions on box and drain
    • Pour half of mixture into large rectangular pan
    • Put a layer of noodles on top of meat
    • Cover noodles with cheese
    • Layer, meat noodles and cheese as before
    • Bake at 350 degrees for 30 minutes or until cheese is melted.

    Chicken Enchilada's

    1 (8 ounce) package cream cheese
    1 cup salsa
    2 cups chopped cooked chicken breast meat
    6 (6 inch) flour tortillas
    2 cups shredded Colby-Jack cheese


    • In a small saucepan over medium heat, combine the cream cheese and salsa. Cook, stirring until melted and well blended.
    • Stir in chicken.
    • Fill tortillas with the mixture, roll and place in a lightly sprayed baking dish.
    • Spread cheese over the top.
    • Cover with aluminum foil.
    • Bake for 30 minutes, or until heated through.
    • Garnish with your favorite toppings such as lettuce and tomatoes, or sour cream

    Shrimp and Potato Soup

    1/2 stick butter
    1 small onion (finely chopped)
    2 medium diced carrots
    2 T flour
    8 medium potatoes (cubed)
    4 cups milk
    2 chicken bouillon cubes dissolved
    1 cup half and half
    1 t salt
    1/4 t pepper
    2 cups salted water
    1 pound shrimp
    bacon, sour cream, and cheese for garnish

    • melt butter and saute onion and carrots until both are tender
    • whisk in flour and cook for one minute
    • add potatoes, milk, and dissolved bouillon cubes
    • cook over medium heat for 15 minutes until potatoes are soft and some have began to dissolve
    • add the half and half, salt, pepper
    • add shrimp and cook over low heat until shrimp are cooked
    • garnish with bacon, cheese, and sour cream if desired

    Meatloaf

    Not a "chunky" meatloaf.


    Loaf
    1 1/2   pound hamburger
       1/2   cup bread crumbs
       3/4  cup milk
          2  eggs
          1  t salt

    Topping - mix the follow three ingredients together well
    1/4  cup ketchup
       2  T brown sugar
       1  t mustard

    • mix ingredients together well
    • put in loaf pan
    • bake at 350 degrees for 65 minutes
    • pull out of oven and pour topping on loaf
    • bake 10 more minutes

    Jean's Mexican Cornbread

    1 1/2 - 2 cups shredded cheddar
    1 small minced onion
    2 eggs, beaten
    1 cup sweet milk
    1/2 cup vegetable oil
    1 cup plain meal
    1 t salt
    1/2 t soda
    1/2 cup cream style corn

    • mix all ingredients together
    • coat skillet with non stick spray and sprinkle with meal
    • bake at 400 degrees for 35 minutes

    Pralines

    
    Betcha can't eat just one!
    This is a Paula Deen recipe.  After making these a
    friend told me they tasted like the Pralines you get in New Orleans. All I know is they are sinful!


    1 1/2   cups sugar
    1 1/2   cups packed light brown sugar
       1/8   t salt
          3  T dark corn syrup
          1  cup evaporated milk
          2  T butter
          1  t vanilla
    1 1/2  cups pecans (chopped in large pieces)

    • butter the sides of a heave 2 quart saucepan
    • place the sugars, salt, corn syrup, milk, and butter in saucepan
    • over medium heat stir mixture constantly with a wooden sppon until sugars have dissolved and mixture comes to a boil
    • continure to cook to soft ball stage (236 degrees)
    • remove from heat and let cool 10 minutes
    • add vanilla and nuts
    • beat with a sppon by hand for approx 2 minutes or until candy is slightly thick
    • quickly drop heaping tablespoons onto wax paper
    • let cool and harden before eating

    Mamaw's Potato Candy

    One of my favorite Christmas memories of my Mamaw...her Potato Candy!

    1 1/2 cup potatoes
          1  pound powdered sugar
       1/2  cup peanut butter

    • boil, drain, and mash potatoes, leaving no lumps
    • mix potatoes with sugar
    • roll mixture into an oblong shape on a pastry mat (lightly dusted with powdered sugar)
    • spread peanut butter on top
    • roll up like a jelly roll
    • cut in slices
    • keep refrigerated

    Coconut Carmel Icing

    Delish on top of Momma's Fresh Apple Cake

    6 T butter
    2/3 cup brown sugar
    1/4 cup milk
    1 cup shredded coconut
    1/2 t  vanilla

    • cook together in saucepan until well dissolved and mix together
    • pour on top of cake

    Momma's Fresh Apple Cake

    2 1/2  cups flour
    1 1/2  cup sugar
          2  eggs
    1 1/2  t cinnamon
       3/4  t salt
       1/2  cup shortening
          6  T buttermilk
    1 1/2  t baking soda
          1  t nutmeg
          3 unpeeled apples (chopped)

    • sift together flour, cinnamon, salt, soda, nutmeg
    • cream sugar and shortening together
    • add eggs and mix well
    • add flour mixture and buttermilk mix well
    • add apples
    • bake at 275 degrees for 45 minutes
    • while cake is still hot pour Coconut Carmel Icing on top or leave icing off and serve with whipped topping

    Homemade Tortilla Chips

    Goes great with Seven Layer Dip!


    1 to 2 packages of corn or flour tortillas.
     
    • cut each of your tortillas into pizza-shaped wedges.
    • to speed things up, stack the tortillas in groups of three or four and cut at one time.
    • fry your wedges in vegetable oil over medium-high heat for about a minute until golden brown and crispy.
    • use a slotted spoon to pull the chips out ,then place on a plate lined with paper towels to drain
    • while the chips are still hot, salt to taste.


    Other ways to season the chips...
    • Chili powder
    • Salt & chili powder
    • Salt, chili powder & onion powder
    • Chili powder, garlic powder & cumin
    • Cumin, chili powder & salt
    • Cumin, oregano & paprika
    • Paprika, cayenne & chili powder
    • Salt, red pepper, cumin & curry
    • Chili powder, salt, crumbled dried oregano & Monterrey Jack cheese
    • cinnamon and sugar (flour chips)

    Seven Layer Dip

          

           2   cans bean dip
    1 1/2   cup sour cream
           1  pkg taco seasoning
         16  ounce carton avocado dip
           1  bunch green onions
           1  cup diced black olives
           1  large diced tomato
           1  small pkg shredded cheddar

    In a deep dish pie plate or trifle bowl layer the dip in this order...
    • bean dip
    • taco seasoning mixed with sour cream
    • avocado dip
    • cheese
    • green onions (finely chopped)
    • tomatoes
    • olives
    • chill and serve with Homemade Tortilla Chips or Frito's

    Enchilada Casserole

    Great topped with sour cream and salsa!



    

    

    1 pound hamburger
    1 can enchilada sauce
    1 can cream of mushroom soup
    1 can cream of chicken soup
    1 cup shredded cheddar
    1/2 bag tortilla chips

    • cook hamburger until brown and drain
    • stir in sauce and soups
    • put back in skillet and cook until hot and bubbly
    • crush tortilla chips and place in bottom of  9x13 dish
    • pour mixture on chips and top on cheese
    • bake at 350 degrees until melted

    Cream Cheese Cinnamon Bites

    Delicious hot or cold

    2 cans crescent rolls
    2 pkg cream cheese
    1 cup sugar
    1 stick margarine
    sugar and cinnamon

    • spray 9 x 13 dish with non stick spray
    • layer one can of crescent rolls in dish, making a solid crust
    • mix together cream cheese and sugar until creamy
    • spread over the layer of crescent rolls
    • layer the other can of crescent rolls over the mixture, leaving them slightly separated
    • pour the margarine over the top
    • sprikle a heavy coat of sugar and cinnamon on top
    • bake at 350 degrees for 10 - 15 minutes
    • store in frig

    Sour Cream Cornbread

    Sour Cream Cornbread
    1 cup self rising cornmeal
    2 large beaten eggs
    1 cup cream style corn
    1 (8 ounce) sour cream
    1/2 cup oil
    2 T sugar

    • mix all ingredients together
    • pour in a greased baking dish or iron skillet
    • bake at 400 degrees for 20-30 minutes or until golden brown

    Oreo Truffles

                                                 

    In honor of  "National Food on a Stick Day"!

    1 pkg Double Stuff Oreos
    1 pkg softened cream cheese
    White Almond Bark

    • Crush 9 of the cookies to fine crumbs in food processor and place in bowl for later use.
    • Crush remaining cookies to fine crumbs and place in medium bowl.
    • Add cream cheese and mix until well blended.
    • Roll cookie mixture into balls, about 1-inch in diameter, stick ball in a wooden skewer and place on a wax paper covered cookie sheet.
    • Put in refrigerator to cool while you melted the almond bark 
    • Dip balls in melted almond bark
    • Place on wax paper-covered baking sheet.  Sprinkle with reserved cookie crumbs.
    • Refrigerate until firm, about 1 hour and enjoy!

    Arkansas Dirt Cake

    1 pkg Oreo cookies ( I prefer double stuff!)
    1 pkg softened cream cheese
    1/2 cup softened butter
    1 cup powdered sugar
    8 oz tub cool whip
    2 small boxes instant vanilla pudding mix
    1 tsp vanilla
    3 cups milk

    • crush cookies an spread half over the bottom of a 9x13 pan
    • mix cream cheese, butter, and sugar until smooth
    • fold in cool whip
    • in separate bowl mix pudding, vanilla, and milk and mix whip until smooth and thickened
    • fold pudding mixture into cream cheese mixture
    • pour over cookie crumb crust and top with remaining cookies
    • chill before serving
    This is a really cool recipe that can be served up different ways.

    Refrigerator Rolls

    2/3 cup sugar
    2 beaten egg yolks
    6 cups flour3 cup butter
    1 t salt

    • pour 1 cup warm water over 2 pkg. yeast
    • cream 2/3 cup sugar and 2/3 cup butter together
    • add 1 cup hot water and stir until lukewarm then add yeast
    • stir in 2 beaten egg yolks, 6 cups flour, and 1 teaspoon salt
    • fold in 2 stiffly beaten egg whites cover in refrigerator overnight
    • divide and shape as desired
    • let rise 2 hours and bake at 400 degrees until brown

    Nanny's Green Tomato Pie

    People will think this one of the best apple pies they've eaten!

    5 green tomatoes, chopped
    1 1/2 cups white sugar
    2 tablespoons cider vinegar
    1 teaspoon ground cinnamon
    1/2 teaspoon ground nutmeg
    1/4 teaspoon ground cloves
    1/2 teaspoon salt
    1/4 cup all-purpose flour


    • Place diced green tomatoes and vinegar in a large bowl.
    • In a medium bowl, mix together sugar, cinnamon, cloves, nutmeg, salt and flour. Sprinkle over tomatoes and toss to coat evenly.
    • Pour into 9 pie crust and cover with another pie crust
    • Bake at 350 degrees F for 30 to 35 minutes, until bubbly and crust is brown.

    Tomato Pie

    4 tomatoes peeled and sliced
    1 prebaked deep dish pie crust (9 inch)
    1 cup grated mozzarella cheese
    1 cup grated cheddar cheese
    1 cup mayonnaise
    10 chopped basil leaves
    1/ cup chopped green onions
    pepper and salt

    • place tomatoes in a colander in single layer
    • sprinkle with salt and allow to drain
    • pat tomatoes dry
    • layer tomato slices, basil, and onions in pie shell
    • season with salt and pepper to taste
    • combine cheeses and mayo
    • spread mixture on top of the tomatoes and bake until the cheese is melted and slightly brown on tips

    Hearty BBQ Dip

    1/2 cup miracle whip
    1/4 cup BBQ sauce with honey
    2 T minced onion
    2 T minced bell pepper

    Mix ingredients together and serve with Baked Potato Spears.

    Parma Dip

    1 cup miracle whip
    1/4 cup Parmesan cheese
    1/4 cup milk
    1 T minced onions

    Combine ingredients together and serve with Baked Potato Spears.

    Baked Potato Spears

    3 large baking potatoes
    1/4 cup miracle whip
    1/2 teaspoon sugar
    1/4 teaspoon ground mustard
    1/4 teaspoon white pepper
    3/4 teaspoon garlic salt

    • cut potatoes lengthwise into quarters
    • mix sugar, mustard, pepper, and garlic salt together
    • brush each quarter with miracle whip
    • season with dry mixture
    • place on an ungreased sheet pan
    • bake at 375 degrees for 50 minutes or until tender and brown
    • serve with favorite dip

    Watergate Salad

    No conspiracy here!  Just plain old cornfed goodness!
    1 small carton whipped topping
    1 pkg instant pistachio pudding mix
    1 can crushed pineapple with juice
    1 cup mini marshmallows
    1/2 cup chopped pecans

    • fold dry pudding mix into whipped topping
    • add pineapple with juice
    • add marshmallows
    • add nuts
    • refrigerate before serving

    Chocolate Chip Cheese Ball

    1 pkg cream cheese
    1 stick butter
    3/4 cup powdered sugar
    2 T brown sugar
    3 1/2 T cocoa powder
    1 1/2 t vanilla
    1 pkg mini chocolate chips
    chopped pecans (optional)
    graham crackers or butter cookies


    • soften cream cheese and butter, then cream together
    • add powdered sugar, brown sugar, cocoa, and vanilla
    • stir in chocolate chips
    • cover and refrigerate for 2 hours
    • take out and roll into a large ball
    • roll ball into chopped nuts or a mixture of white and dark chocolate chips
    • refrigerate at least another hour
    • serve on graham crackers or butter cookies
    You could also spoon mixture into a graham cracker or cookie crust and top with graham cracker crumbs and more chocolate chips.

    Cheesy Bread

    1 loaf french onion bread
    2 cups shredded mozzarella
    1/2 cup melted butter
    1/2 cup mayonnaise
    1/2 cup minces green onions
    1/2 minced black olives
    garlic powder

    • mix all ingredients in a bowl except bread and garlic powder
    • cut loaf in half lengthwise spread mixture on both halves
    • sprinkle with garlic powder
    • bake at 350 degrees for 10 to 15 minutes

    Hershey Bar Cake


    One seriously rich cake that taste best when made the day before serving.


    Cake

    1 box Swiss cake mix
    1 small box instant vanilla pudding mix
    3 eggs (beaten)
    1 cup oil
    2 cups buttermilk

    Mix ingredients together, stirring well.  Grease and flour two 9 inch round pans.  Bake at 350 degrees for 25 to 30 minutes.  Cool completely and frost.

    Frosting

    8 ounces softened cream cheese
    1 cup granulated sugar
    1 cup powdered sugar
    8 ounce tub of whipped topping
    6 to 8 ounces grated chocolate bar

    Mix indgredients together and frost cake.  Keep refrigerated.

    Stuffed Mushrooms

    The recipe I get the most request for...

    3 boxes mushrooms
    1 package bacon (cooked and crumbled)*
    1 cup mayonnaise**
    2 cups shredded sharp cheddar*
    1/2 small onion chopped finely (optional)
    garlic salt

    • Remove stems from mushrooms and set aside. 
    • Mix bacon, mayo, cheddar, onion (optional), and garlic salt(to taste).  
    • Stuff into mushrooms and bake at 350 degrees until stuffing is bubbly.  Do not overcook. 
    • Mushrooms are best served hot from the oven.

    * amount of bacon and cheese can be adjusted to your taste
    ** for creamier stuffing add more mayo

    Dreamsicle Salad (Tang Salad)

    Astronauts wish they had this to eat in deep space! 

                

     
    1/2 cup orange instant breakfast drink mix
    1 can sweetened condensed milk
    8 ounce carton sour cream
    1 small tub whipped topping
    2 cans mandarin oranges (drained)

    • Mix the sweetened condensed milk, sour cream and drink mix together. 
    • When drink mix is somewhat dissolved mix in the whipped topping.  
    • Set aside a few mandarin oranges and fold in the rest. 
    • Pour mixture in a bowl and garnish with mandarin slices. 
    • Chill several hours before serving.
     I like to layer this dessert in a trifle bowl with an extra can of mandarin oranges then arrange slices in a pretty design on top. 

    Veggie Bites (aka Veggie Pizza)

    Broccoli and Cauliflower and Pimentos
    OH MY
    2 cans crescent rolls
    1 package ranch dressing mix
    1/2 cup mayonnaise
    1 eight ounce package cream cheese
    2 small boxes frozen broccoli (thawed, drained, and florets cut off and into small pieces)
    1 head fresh cauliflower (florets cut off and into small pieces)
    1 small jar chopped pimentos (drained)
    2 cups shredded sharp cheddar


    • Place crescent rolls on a large rectangle cookie sheet without tearing apart.  Bake until just done and no longer.  Set aside to cool. 
    • Mix softened cream cheese, ranch dressing mix and mayo together until creamy.
    • Spread mixture on top of crescent rolls crust
    • Layer all the veggies on top like you would pizza toppings then sprinkle cheddar on top. 
    • Cut into 2 inch squares and arrange on a pretty plate. 
    • Lightly cover with foil and refrigerate before serving.

    Note:  any veggie that you like can be added to this recipe:  fresh green onions, carrots, mushrooms, tomatoes, etc. 

    Ro - tel Spinach Dip

    Nice and cheesy and it's really really easy!


    1 ten ounce package frozen spinach
    1 pound Velveeta
    1 box cream cheese
    1 can Ro-tel

    • Microwave spinach on high five minutes. 
    • Stir in rest of ingredients and microwave until cheese is melted. 
    • Serve with chips. 
    See I told you it was easy!

    Taco Soup

     A quick and easy way to get "trashy" breath!
    2 pounds hamburger (cooked and drained)
    1 small onion (chopped)
    1 clove minced garlic
    2 cans Ro-tel
    2 cans hominy
    2 can black beans (drained)
    2 T chili powder
    1 package taco seasoning mix
    1 package ranch dressing mix
    Taco Soup
    





    • Brown hamburger, onion, garlic and drain well. 
    • Combine hamburger with rest of ingredients in stew pot. 
    • Simmer for 30 minutes. 
    • Top with cheese, corn chips, sour cream, and/or black olives. 

    Simple Potato Soup

    1 package frozen hash browns
    1 cup chopped onions
    1 can chicken broth
    2 cans water
    1 can cream of chicken soup
    1 can cream of celery soup
    2 cups milk

    • Bring hash browns, onions, and broth to a boil then simmer for 30 minutes. 
    • Add soups and milk and continue to simmer for 20 minutes stirring occasionally. 
    •  Serve.

    Top with sour cream and cheese to make baked potato soup.

    Clam Chowder

    Scooter loves clam chowder so I make this every once in awhile.

    6 large diced potatoes
    1 large minced onion
    6 bacon strips
    1-2 small cans evaporated milk   or   2-3 cups half&half
    2 cans chopped clams (do not drain)
    2 T margarine


    • Cook potatoes in large kettle with enough water to cover until tender. 
    • Cook bacon and onions together and drain. 
    • When potatoes are done add onion, bacon, and clams. 
    • Add enough milk to make creamy. 
    • Float margarine on top.
    • Serve

    Fried Shrimp Breading

    1 cup flour
    1/2 teaspoon sugar
    1 egg
    3/4 cold water
    2 T vegetable oil
    Breadcrumbs or Panko

    • Combine flour, salt and pepper
    • Dip shrimp in flour mix
    • Coat with breadcrumbs
    • Fry in oil until done

    Mamaw's Dressing

    In memory of the Queen Mother...

    3 packages Jiffy cornbread mix
    5 eggs
    2 cans cream of chicken soup
    1 small can pet milk
    3-4 cups chicken broth
    ground sage
    1 small minced onion
    6 slices bread torn into bits

    • Cook cornbread and crumble completely
    • Mix broth with eggs
    • Add cornbread, egg mixture, soup, bread and pet milk until mixture is a thick soup consistency
    • Add sage to taste
    • Cook at 350 degrees until done in middle.

    Cheesy Garlic Biscuts

    Biscut

    2  cups Bisquick
    2  cups grated cheddar
    1/2  teaspoon garlic powder
    1/4  cup margarine
    1/2 cup milk

    Topping

    Mix the next three items together and set aside.
    1 T melted butter
    1 T Parmesan
    1/4 t parsley

    • mix garlic powder and Bisquick
    • cut in butter
    • add grated cheese and milk
    • stir briefly
    • drop on greased cookie sheet and bake at 425 degrees until golden brown
    • brush on topping and serve

    Nanny's Zucchini Bread

    Eat as much as you like, it has veggies in it.

    3 cups flour
    1 1/2 cups sugar
    1 cup walnuts
    4 1/2 teaspoons double acting baking powder
    1 teaspoon salt
    4 eggs
    2/3 cup vegetable oil
    2 cups grated zucchini
    2 teaspoon grated lemon peel
    2 cups raisins
    • mix flour, sugar, walnuts, baking powder, salt, and raisins
    • beat eggs slightly
    • stir in vegetable oil, zucchini, and lemon
    • stir liquid mixture into flour mixture
    • pour in greased and floured loaf pan
    • bake at 350 degrees for one hour or until toothpick comes out clean

    Spanish Omelettes

    Recipe makes enough for two omelets.

    2 T minced green pepper
    2T minced onion
    4 T butter
    2 eight ounce can tomato sauce
    4 T sugar
    2 t Worcestershire sauce
    dash cayenne pepper

    • in medium skillet cook and stir green pepper and onion in butter over low heat until onion is tender
    • stir in tomato sauce, sugar and seasonings
    • simmer for 10 minutes or until sauce is thickened
    • pour into a three egg omelet (recipe makes enough for two omelets.)

    Green Bean Bundles

    Katiebug loves these sweet bundles!
    1 stick butter
    1/2 cup brown sugar
    garlic salt
    3 cans whole green beans
    1 package bacon

    • cut bacon in half and wrap around 8 to 10 green beans and place in baking dish
    • melt butter in microwave and mix in brown sugar
    • pour over bundles
    • sprinkle with garlic salt
    • bake at 375 degrees for 30 minutes

    Atomic Buffalo Turds

    Deer back-strap fillets (3/4 inch)
    Bacon
    Cream cheese
    Teriyaki sauce (thick sauce works best)
    Garlic powder
    Pepper Jack cheese (thinly sliced)
    Diced jalepenos
    onion (thinly sliced)

    • Pound fillets until meat is the size of a softball.
    • dip into teriyaki sauce
    • dust with garlic powder
    • spread cream cheese on one side, the more the better
    • add onion and jalapenos
    • roll meat up like a sushi roll
    • wrap bacon around the roll and secure with a toothpick
    • lay on hot grill until bacon is cooked the way you like it
    • about five minutes before being done add slice of pepper jack cheese on top and let melt
    • serve and then step aside, some serious stuff is about to happen!  :)
