Eat as much as you like, it has veggies in it.
3 cups flour
1 1/2 cups sugar
1 cup walnuts
4 1/2 teaspoons double acting baking powder
1 teaspoon salt
4 eggs
2/3 cup vegetable oil
2 cups grated zucchini
2 teaspoon grated lemon peel
2 cups raisins
- mix flour, sugar, walnuts, baking powder, salt, and raisins
- beat eggs slightly
- stir in vegetable oil, zucchini, and lemon
- stir liquid mixture into flour mixture
- pour in greased and floured loaf pan
- bake at 350 degrees for one hour or until toothpick comes out clean
